8 1/2 tablespoons unsalted butter , at room temperature ( plus butter for the baking pan )
1 1/2 cups confectioners ' sugar
3 large eggs , at room temperature
4 tablespoons apricot jam , melted and still warm

Instructions

1.Preheat oven to 325°F.
2.Soak raisins in water for 15-20 minutes and drain them afterward. Add 1 tablespoon of dark rum and leave it aside to rest.
3.Cut apples into small pieces and mix them with 1/2 teaspoon dark rum.
4.Mix 1 cup flour with baking powder in a separate bowl.
5.In a large bowl, beat butter and sugar together until light and fluffy. Add eggs, one at a time, beating well after each addition. Gradually add flour mixture and mix well.

7.Pour batter into a buttered and floured 9x5 inch loaf pan and smooth the surface of the cake batter.
