1 lb paparadelle pasta or 1 lb broad noodles

Instructions

1.Boil a pot of salted water and cook the paparadelle pasta or broad noodles for about 10-12 minutes until al dente. Reserve 1 cup of pasta cooking water and drain the pasta.
2.Cut off the woody ends of the asparagus and cut into 2-inch long pieces.
3.In a large sauté pan, heat butter over medium heat, add onions and cook until they are tender for around 4 minutes.
4.Add garlic and mushrooms to the pan and cook until tender, about 5 minutes.
5.Add asparagus and cook for 5 minutes more, making sure to stir frequently.
6.Add heavy cream and fresh lemon thyme, then bring to a boil stirring occasionally.
7.Reduce heat and simmer the sauce for 5 minutes to thicken it, stirring frequently.
8.Stir in grated parmesan and toasted pine nuts, season with salt and pepper to taste.
9.Add pasta to the pan and toss to combine, adding reserved pasta cooking water to thin the sauce if needed. Serve hot.
