10 hard-boiled eggs , coarsely chopped
4 tomatoes , roasted and peeled

Instructions

3.Warm up the tortillas in the oven or in a skillet until pliable.

5.Spoon some of the chopped boiled eggs down the center of the coated tortilla.
6.Roll up the tortilla tightly, enclosing the filling inside. Repeat until all tortillas are stuffed and rolled.
7.Arrange the filled tortillas on plates and drizzle with the tomato and habanero sauce on top.
8.Sprinkle with salt and pepper to taste.
