Ingredients

4 potatoes
1/2 head cauliflower
2 carrots
1 cup green peas
1/4 cup channa dal
2 onions , chopped
4 tomatoes , sliced
12 bread rolls ( or buns )
2 tablespoons oil
oil , to pan-fry the rolls
1 teaspoon salt
1 teaspoon mustard seeds
2 whole red chilies
1/2 teaspoon red chili powder
2 teaspoons pao bhaji masala ( available at Indian grocery stores )

Instructions

1.Boil potatoes, cauliflower, carrots, green peas, and channa dal together until mushy. Drain and mash the vegetables.
2.Heat oil in a large pan, add mustard seeds and red chilies, and let them splutter.
3.Add chopped onions and sauté until they turn translucent.
4.Add sliced tomatoes and cook until they soften.
5.Add the mashed vegetables, salt, chili powder, and pao bhaji masala, and mix well.
6.Add water as needed to get the desired consistency.
7.Simmer on low heat for 10-15 minutes, stirring occasionally.
8.Heat some oil in a pan and lightly toast the bread rolls on both sides.
9.Serve the pao bhaji hot with the toasted rolls on the side.
