Ingredients

6 Callisons Garlic Herb Seasoned Skewers ( appetizer size )
18 cubes artisanal-style bread
12 cherry or grape tomatoes
12 pieces red bell pepper
12 pieces yellow bell pepper
1 large fresh mozzarella ball , diced 1/4-inch
3 tablespoons store bought basil pesto
6 small romaine heart leaves
Olive oil , as needed
Salt and freshly ground pepper to taste

Instructions

1.Heat a grill or grill pan over medium heat.
2.Thread 3 cubes of bread onto each skewer, followed by a tomato, a piece of red pepper, a piece of yellow pepper, and another tomato.

4.Grill the skewers, turning occasionally, until the bread is toasted and the vegetables are starting to soften, about 5-6 minutes.
5.In a small bowl, whisk together the basil pesto and a tablespoon or two of olive oil until smooth.
6.To serve, place a skewer on a small plate with a romaine leaf or two, and drizzle with the pesto sauce.
