Pannetone French Toast is a variation of the classic French Toast recipe that uses slices of sweet bread instead of regular bread. This Italian-inspired recipe uses slices of panettone, a sweet bread that is traditionally eaten during the holiday season. The bread is soaked in a mixture of coconut milk, eggs, sugar, and vanilla, and is then fried until golden brown. Served with a dusting of confectioners' sugar, a handful of blueberries, and a dollop of whipped cream, this Pannetone French Toast is a sweet and decadent way to start your day.

Instructions

1.In a large mixing bowl, whisk together the scraped vanilla bean, coconut milk, eggs, sugar, and ground cardamom.
2.Heat a large non-stick frying pan over medium-high heat and add 1 tablespoon of butter.
3.Dip a slice of panettone into the egg mixture, soaking it well on both sides. Place the coated bread into the hot pan and cook until golden brown on both sides, about 2-3 minutes per side.
4.Repeat with the remaining slices of bread, adding more butter to the pan as needed.
5.Serve with a dusting of confectioners' sugar, a handful of blueberries, and a dollop of whipped cream.
