Ingredients

500 ml double cream ( slightly less than a pint )
1/2 g vanilla powder , see note below
90 g sugar
4 g instant coffee
15 ml dark rum
4 g gelatin , leaves
cocoa powder , for dusting
coffee beans , A few for decorationa

Instructions

1.Pour the double cream into a saucepan and heat over low heat.
2.Add vanilla powder, sugar, instant coffee, and dark rum and stir it thoroughly.
3.Take the pan off the heat and let it cool for a few minutes.
4.Soak the gelatin leaves in cold water for about 5 minutes.
5.Squeeze the excess water out of the gelatin leaves and add them to the slightly cooled cream mixture
6.Stir continually until the gelatin dissolves.
7.Pour the mixture into glass cups or moulds, and let it set in the fridge for at least 2-3 hours or overnight.
8.To serve, dust the surface with cocoa powder and add a few coffee beans on top for decoration.
