Ingredients

1 lb savoy cabbage
3 carrots , peeled and sliced
2 stalks white celery , trimmed and sliced
1 leek , trimmed and diagonally sliced
2 tablespoons fresh basil , finely chopped
3 tablespoons fresh parsley , finely chopped
1 teaspoon dried bay leaf
1 teaspoon dried oregano
8 ounces borlotti beans
4 slices bacon , very fatty and chopped thinly
1/2 lb ground Italian sausage
6 tablespoons olive oil
salt , to taste
1 cup white wine
1 lb risotto rice ( Arborio )
Paniscia Alla Novara is a traditional dish from Piedmont, Italy. It is a variation of Italian risotto that uses carnaroli or arborio rice cooked with pork sausage, pancetta, savoy cabbage, and borlotti beans. The dish has a soft texture and a creamy consistency. Instructions

1.Rinse and chop the vegetables and herbs.
2.Heat the oil in a large pot over medium heat.
3.Add the bacon and sausage and cook until browned.
4.Add the vegetables and herbs, salt and wine and cook for a few minutes.
5.Add borlotti beans, rice, and salt to taste and cook for a few minutes while stirring.
6.Add enough boiling water to cover the rice and stir again.
7.Cook over medium-high heat while stirring for about 18 minutes or until rice takes its shape and is tender.
8.Remove from heat and let it rest for a few minutes, then stir, adjust seasoning to taste and serve.
