Ingredients

1 1/2 lbs panir , from 1 gal milk
1 teaspoon gingerroot , grated
1/2 teaspoon turmeric
4 cloves
4 cardamom pods
salt
1/2 cup cashews , soaked in water 25 minutes
1 teaspoon sugar
2 tablespoons butter
4 tablespoons ghee
2 cups tomato puree
1/2 teaspoon chili powder
1 cinnamon stick
2 teaspoons garam masala
1/4 cup cream
6 tablespoons fenugreek leaves , dry
lemon wedge

Instructions

1.Cut the panir into cubes and set aside.
2.Heat a pan and add gingerroot, turmeric, cloves, and cardamom. Dry roast for 1 minute.
3.Add the panir cubes and a pinch of salt. Stir and cook until the panir turns golden brown.
4.Remove the panir cubes from the pan and set aside.
5.Add soaked cashews to the same pan and saute for 1-2 minutes.
6.Take off from flame and let the cashews cool down a bit. Then blend them into a smooth paste with a little water.
7.Heat the pan again and add butter and ghee.
8.Add tomato puree and cook for 1-2 minutes.
9.Add chili powder, cinnamon stick, and garam masala. Mix well.
10.Add the cashew paste and stir well.
11.Add cream, fenugreek leaves, and a pinch of salt. Mix well.
12.Add the cooked panir cubes.
13.Serve with a lemon wedge.
