Ingredients

1/3 cup warm water
2 ( .25 ounce ) packages active dry yeast
4 cups all-purpose flour
1/2 cup warm milk
2/3 cup white sugar
4 eggs
2 egg yolks
1 teaspoon vanilla extract
12 tablespoons unsalted butter
2 cups candied mixed fruit
2 1/2 teaspoons grated lemon zest
2 tablespoons orange zest
2 tablespoons butter , melted
1 egg yolk
1 tablespoon cream

Instructions

1.In a small bowl, mix warm water and yeast together until frothy.
2.In a large mixing bowl, combine flour, sugar, salt and gradually mix in eggs, egg yolks, warm milk and mix in the yeast mixture.
3.After mixing well, add melted butter and keep mixing for about 8-10 minutes until the dough is smooth and glossy.
4.Add lemon zest, orange zest, and candied fruit and mix for a minute.
5.Transfer the dough to a large greased bowl, cover it with a damp cloth and let it rise for about 2 hours.
6.Divide the dough into 3-4 portions, then place the portions in the prepared paper loaf pans and let it rise for another 30 mins.
7.Brush the top of each loaf with egg wash (egg yolk + cream), and bake in a preheated oven at 325 degrees F for about 45 mins to 1 hour or until a toothpick inserted comes out clean.
8.Once it's done, let it cool on a cooling rack. Serve and enjoy!
