Ingredients

1 package dry yeast
1/2 cup lukewarm water

3/4 cup butter , room temperature
1/2 cup sugar
3 eggs , room temperature
3 egg yolks , room temperature
1 teaspoon vanilla
1 teaspoon salt
4 cups all-purpose flour , approximately
1/3 cup raisins , rinsed and patted dry
1/2 cup shredded candied lemon peel
1/2 cup shredded candied citron peel
1/2 cup chopped blanched almond
1 tablespoon sugar
24 whole blanched almonds

Instructions

1.In a small bowl, dissolve the yeast in the lukewarm water and let rest for 10 minutes.

3.Cover and let rise in a warm place for 30 minutes.
4.In a separate bowl, cream the butter and sugar together until light and fluffy.

6.Gradually stir in the 4 cups of flour, adding enough flour to form a soft dough.
7.Knead the dough for 10 minutes, then transfer to a greased bowl and let rise in a warm place until doubled in size.
8.Add the raisins, candied lemon and citron peels, and chopped almonds to the dough and knead until well combined.
9.Divide the dough into two parts and shape each part into a ball.
10.Place each ball into a panettone mold or a 7- to 8-inch tall cylindrical container lined with parchment paper and let rise for 2-3 hours or until the dough has doubled in size.
11.Preheat the oven to 350°F (175°C).
12.Brush the tops of the loaves with a mixture of 1 tablespoon sugar and 2 tablespoons water.
13.Gently press a whole blanched almond into the top of each loaf.
14.Bake for 45-50 minutes or until a skewer inserted into the middle of the loaves comes out clean.
15.Remove from oven and let cool before removing from the molds.
