2 teaspoons active dry yeast

4 tablespoons butter
2 eggs
2 egg yolks
1/2 cup water
1/2 cup raisins

Instructions

1.Add the yeast, 2 and 3/4 cups of bread flour, salt, candied zest, sugar and butter to the bread machine
2.In a separate cup, beat the eggs, egg yolks, and water together, then add to the bread machine
3.Set the bread machine to the dough cycle and press start
4.After the dough cycle is complete, add the raisins to the bread machine and set to mix for another 4-5 minutes
5.Tightly pack the dough into a 7-inch panettone mold lined with parchment paper
6.Allow the dough to rise in a warm place for about 1-2 hours until it has doubled in size
7.Preheat oven to 375°F/190°C and bake the panettone in the center of the oven for 40-45 minutes until golden brown
8.Remove from the oven and allow the panettone to cool on a wire rack for 1-2 hours
