200 g cottage cheese ( Paneer Cubes )
1 1/4 cups basmati rice
2 medium onions
1 inch ginger
5 garlic cloves
1/4 cup coriander leaves
1/4 cup mint leaf
2 medium tomatoes
1/2 cup skim milk yogurt
4 -5 saffron strands
1 bay leaf
4 cloves
2 green cardamoms
2 black cardamom pods
1 inch cinnamon stick
salt
2 tablespoons oil
1 teaspoon red chili powder
1 teaspoon coriander powder
1/2 tablespoon peppercorn ( crushed )
1/2 teaspoon cumin powder
1/2 teaspoon turmeric powder
1/2 teaspoon garam masala powder
4 -5 drops kewra essence

Instructions

1.Soak the basmati rice in water for 30 minutes.
2.In a skillet, heat the oil and add the sliced onions. Fry the onions until they are golden brown.
3.Add ginger and garlic paste to the onions and fry for 2 minutes.
4.Add chopped tomatoes and cook until they are soft and tender.
5.Add red chili powder, coriander powder, cumin powder, peppercorn, turmeric powder, and garam masala. Mix well and cook for 1-2 minutes.
6.Add the chopped paneer cubes and mix well. Cook for 5 minutes.
7.Add the soaked basmati rice and mix well. Add 2 1/2 cups of water, salt and 4-5 drops of kewra essence and mix well.
8.Soak saffron strands in 1/4 cup of warm milk and sprinkle over the rice.
9.Cover the skillet with a lid and cook over medium heat until the rice is cooked.
10.Once the rice is cooked, serve hot and garnish with coriander leaves and mint leaves.
