Ingredients

1 pandora fish , scaled & gutted ( about 1.5 kilos )
300 g sliced mushrooms
75 g linguine
1 onion , chopped
1 teaspoon rosemary , crushed and dried
112 1/2 ml olive oil
1 tablespoon olive oil ( for fish )
2 tablespoons olive oil ( for vegetables )
3 ounces grappa ( without aniseed ) or 3 ounces tsipouro alcohol ( without aniseed , 2 shots )
1 teaspoon salt
1/2 teaspoon green peppercorn , ground
1/2 teaspoon black pepper
60 ml water ( approx )
120 ml water ( for the mushrooms )
Pandora fish, also known as 'Pagro' in Italian or 'Dentex' in Spanish, is a type of bream that is found off the Mediterranean coast. This fish has a firm and succulent texture, with a gentle meaty flavor that pairs well with linguine and mushrooms. Instructions

1.Preheat oven to 180°C.
2.Rinse the fish and dry with a paper towel. Salt and pepper the fish.
3.In a large skillet, sauté the mushrooms and onion with the olive oil over medium-high heat until they are softened.
4.Add grappa and ignite. Once the flame is extinguished, add 60 mL of water and simmer for 15-20 minutes until the liquid has reduced to half.
5.Combine cooked linguine and the mushroom mixture. Add rosemary and mix well.
6.Place the fish in a baking dish and pour the vegetable mixture over the fish.
7.Drizzle the olive oil on the fish.
8.Add about 120 mL of water to the bottom of the dish.
9.Bake uncovered for 30-40 minutes, until the fish is cooked through.
