Ingredients

1 side pork , sliced
water
1 tablespoon salt
1 lb medium shrimp , shelled and deveined
1 teaspoon cornstarch

2 1/2 lbs chicken legs with thigh , bite size pieces

3 tablespoons oil
3 links Chinese sausage , sliced diagonally
1 cup red onion , sliced
2 tablespoons garlic , minced
1 napa cabbage , sliced into strips
1 cup dried black fungus , presoak and shredded
4 stalks celery , sliced
2 carrots , diced
1 cup scallion , diced
4 bags pancit noodles
1 quart chicken broth
Kikkoman soy sauce

Instructions

1.In a large pot, boil side pork with water and 1 tablespoon of salt until well done. Set aside the meat and pork broth.
2.In a bowl, marinate the shrimp with cornstarch, salt, and pepper.
3.In a wok, heat oil and stir-fry chicken until brown. Add salt, garlic and onion mix, ginger powder, sugar and soy sauce.
4.Add the shrimp and stir-fry until cooked. Remove the chicken and shrimp from the wok and set aside.
5.Using the same wok, add oil and fry the Chinese sausage in batches until brown. Set aside.
6.In the same wok, saute onion and garlic until golden brown. Add the vegetables and saute until cooked.
7.Pour the chicken broth into the wok and bring to a boil. Add pancit noodles and stir for a few seconds until cooked.
8.Put all the cooked ingredients in the pot of pancit noodles. Add soy sauce, fish sauce, salt, and pepper to taste.
