Ingredients

1 lb boneless skinless chicken breasts or 1 lb boneless skinless chicken thighs
1 lb lean pork , fat trimmed
1 lb small shrimp , shelled
3 cloves garlic , minced
1 small onion , thinly sliced
1/2 Chinese cabbage , thinly sliced
3 carrots , julienned
1/4 cup sesame oil or 1/4 cup vegetable oil ( may be substituted )
3 tablespoons soy sauce
1/2 teaspoon salt
1 teaspoon pepper
1 lb rice noodles ( or bean threads )
Pancit Bihon or Bijon is a popular Filipino noodle dish that is often served at family gatherings and special occasions. Instructions

1.In a large pot, boil chicken and pork in 4 quarts of water for 30-40 minutes. Set aside the meat and save the broth. Once cooled, shred chicken and pork into small pieces.
2.In a large wok or skillet, heat sesame oil over medium-high heat. Sauté garlic and onion until tender.
3.Add shredded chicken and pork to the wok and mix well.
4.Add Chinese cabbage and carrots. Stir-fry for 2-3 minutes.
5.Pour in the reserved broth. Add shrimp and rice noodles. Season with soy sauce, salt, and pepper. Toss until well combined.
6.Cover the wok and let simmer for 5-7 minutes or until noodles are cooked through. Stir occasionally.
