3 beetroots
500 ml yoghurt , drained
1/2 teaspoon caraway seed
salt & pepper
1 tablespoon mint , fresh & chopped

Instructions

1.Preheat oven to 200C/400F.
2.Wrap beetroot in aluminium foil and bake for 1 hour until tender. Peel and chop beetroot into small slices.
3.In a separate bowl, mix yoghurt, caraway seed, salt, and pepper together.
4.Add the beetroot slices to the yoghurt mixture.
5.Sprinkle chopped fresh mint and mix well.
6.Chill before serving.
