Ingredients

3 eggs
1 cup water
1 cup all-purpose flour
1 pinch salt
peanut oil , for greasing pan
1/2 lb veal stew meat , cut into 1-inch cubes
1/2 lb boneless skinless chicken breast , cut into 1-inch cubes
2 cups chicken stock
3 cups paprika gravy ( see recipe in this cookbook )
salt & freshly ground black pepper
1 tablespoon freshly rendered lard
1 cup sour cream

Instructions

1.In a large mixing bowl, whisk the eggs until light and frothy

4.Cook for 2 minutes or until bottom is slightly browned, then flip and cook other side.
5.Repeat process for the rest of the batter
6.Heat up lard in another pot. Add veal, chicken and sauté until golden brown
7.Add chicken stock, then cook for 10 minutes
8.Add paprika gravy, salt, and black pepper to taste
9.Before serving, add a dollop of sour cream on top of each pancake
