2 limes , rinds
1 cinnamon stick
1 teaspoon vanilla extract
3/4 cup flour , sifted
1/2 teaspoon baking powder
1/4 teaspoon salt
3 eggs , separated
3/4 cup granulated sugar
1 tablespoon water
1 teaspoon vanilla extract
1 cup sweet sherry ( port wine good too )
2 1/2 cups syrup ( prepared initially )
ground cinnamon , to taste
Panatela Borracha, or Cuban Drunken Sponge Cake, is a traditional dessert in Cuba. This cake is soaked in sweet sherry and cinnamon syrup, giving it a unique and delicious flavor. Instructions

1.Preheat oven to 350°F (175°C).
2.In a pot, mix together 2 cups granulated sugar, 1/2 cup water, 1/4 cup lime juice, 2 lime rinds, 1 cinnamon stick, and 1 tsp vanilla extract. Cook over medium heat until it reaches a syrupy consistency.
3.In a separate bowl, combine 3/4 cup sifted flour, 1/2 tsp baking powder, and 1/4 tsp salt. Set aside.
4.In a large mixing bowl, beat 3 egg yolks until light and creamy. Add in 3/4 cup granulated sugar, 1 tbsp water, and 1 tsp vanilla extract. Mix until well combined.
5.Beat 3 egg whites to stiff peaks. Fold the egg whites into the egg yolk mixture.
6.Fold in the dry ingredients a little at a time. Mix well.
7.Pour the batter into a greased and floured 9x13 baking dish. Bake for 25-30 minutes, or until a toothpick comes out clean.
8.Using a fork, poke holes all over the hot cake. Pour 1 cup of sweet sherry over the top, making sure it soaks in.
9.Pour the prepared syrup over the cake, making sure it covers the cake evenly. Sprinkle with ground cinnamon to taste.
10.Let the cake cool to room temperature before serving.
