1 tablespoon olive oil
3 tablespoons flour

Instructions

1.Start by peeling and slicing the sweet potatoes into round chips, around 2mm thick.
2.Heat the vegetable oil in a frying pan and add the sweet potato chips. Fry them for 2-3 minutes until golden brown and crispy.
3.Remove the sweet potato chips from the pan and place them on a plate lined with paper towels to absorb any excess oil.
4.In the same pan, add 1 tablespoon of butter and olive oil and heat it until melted.
5.Season the scallops with salt, pepper, and paprika, and sear them in the hot butter and oil for 2-3 minutes on each side until golden brown and cooked through.
6.Remove the scallops from the pan and set them aside.
7.To make the bleu cheese sauce, melt the remaining butter in a saucepan over medium heat.
8.Add the flour and whisk until smooth. Cook for 1-2 minutes until the mixture turns golden brown.
9.Gradually pour in the milk, whisking constantly, until the mixture is smooth and creamy.
10.Add the blue cheese, salt, nutmeg, and a squeeze of lemon juice. Stir until the cheese has melted and the sauce is smooth.
11.Taste the sauce and adjust the seasoning if needed.
