Instructions

1.Preheat the oven to 375°F (190°C).

5.Remove the chicken from the skillet and set aside. Drain all but about 2 tablespoons of the fat from the skillet. Add the shallot and garlic and cook over medium heat until fragrant, about 1 minute. Whisk in the chicken broth mixture, scraping up any browned bits from the bottom of the skillet. Simmer until the sauce thickens, about 5 minutes.
6.Stir in the butter and tarragon. Season the sauce with salt and pepper to taste. Serve the chicken with the sauce poured over it.
