Ingredients

16 ounces spinach
5 tablespoons extra virgin olive oil
1 onion , finely chopped
4 ounces chive & onion cream cheese or 4 ounces cream cheese , softened
1/2 cup finely grated parmesan cheese , plus more for serving
salt and pepper
1 -2 pinch crushed red pepper flakes ( optional )
48 wonton wrappers ( from a 12-ounce package )
1 1/2 cups store-bought tomato sauce & mushrooms , warmed , for serving
chopped parsley , for sprinkling
Ravioli is a traditional Italian recipe that is served as a part of the primo course meal. Pan-Fried Spinach Ravioli is a great way to enjoy this Italian dish in a crispy and flavorful way. Instructions

1.Rinse and drain spinach. Wilt spinach in a large nonstick skillet over medium heat for 2–3 minutes. Once wilted, remove from heat and squeeze out excess liquid. Let cool for at least 10 minutes.
2.Heat oil in the same skillet over medium heat until hot. Add onion and cook until soft, about 4–5 minutes. Let cool.
3.In a food processor, combine the spinach and onion, then pulse until rough paste forms. Add the cream cheese and pulse again until smooth.
4.Stir in Parmesan cheese, teaspoon of salt, 1/4 teaspoon pepper and optional red pepper flakes.
5.Working in batches, spread 24 wonton wrappers on a cutting board. Spoon 1 teaspoon filling into the center of each wrapper. Brush the edges with water, fold in half diagonally to form a triangle, and press the edges together to seal the ravioli. Lay them in a single layer on a baking sheet.
6.Heat 1 tablespoon of oil in the skillet over medium heat until hot. Working in batches, add the ravioli and cook, turning once, until crisp and golden brown, approximately 2 minutes per side. Repeat with remaining oil and ravioli.
7.Serve the ravioli hot, drizzled with the warmed tomato sauce and sprinkle with Parmesan cheese and chopped parsley.
