Ingredients

2 tablespoons small dried prawns
1/4 cup rice vermicelli
3 eggs
1 pinch salt
1 tablespoon vegetable oil
2 bunches Chinese chives , finely chopped
2 mushrooms , finely chopped
1 tablespoon vegetable oil
1/2 teaspoon salt
1/4 teaspoon sesame oil
1 pinch ground black pepper
40 round wonton wrappers
1 1/4 cups boiling water
1 tablespoon vegetable oil , or as needed
Pan-Fried Chinese Dumplings, also known as potstickers or jiaozi, are a traditional Chinese appetizer often served during the Chinese New Year or other celebratory occasions. They are believed to bring good luck and represent wealth and prosperity due to their resemblance to ancient Chinese gold ingots. These dumplings are filled with savory and juicy meat, usually pork, cabbage, and garlic, and can be boiled, steamed, or pan-fried. Their crispy bottoms make them an especially popular treat, and they can be eaten on their own or dipped in soy sauce or other dipping sauces for extra flavor.

Instructions

1.Soak the dried prawns in ½ cup of hot water for 10 minutes.
2.Soak the rice vermicelli in 1 cup of hot water for 15 minutes or until they are soft.
3.In a large bowl, beat the eggs with a pinch of salt and set aside.
4.Heat 1 tablespoon of vegetable oil in a large skillet over medium heat. Add the Chinese chives and mushrooms and stir-fry for 2-3 minutes until they are fragrant.
5.Add the soft rice vermicelli, drained dried prawns, salt, sesame oil, and black pepper to the skillet and stir-fry for 1-2 minutes until well combined. Remove from heat.
6.Take a wonton wrapper, place a tablespoon of filling in the center and fold it into a half-moon shape, pressing the edges together to seal it tightly.
7.Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add the dumplings and cook for 2-3 minutes until the bottom is golden-brown.
8.Add ½ cup of boiling water to the skillet and immediately cover it with a tight-fitting lid. Cook for 5-6 minutes until all the water has been absorbed and the dumplings are fully cooked. Serve hot.
