Instructions

1.Heat a tablespoon of corn oil over medium heat in a skillet and sauté half a cup of chopped onion until it starts to turn translucent.
2.Add half a pound of poached, shredded, firm-fleshed white fish, one or two epazote leaves, and one finely chopped, roasted, peeled tomato. Stir well and cook for 2-3 minutes, then remove from heat.
3.In a saucepan, heat another tablespoon of corn oil over medium heat and sauté another 1/2 cup of chopped onion until it is golden brown.
4.Add three boiled, peeled, and pureed Roma tomatoes, one or two epazote leaves, and salt to taste.
5.Spread six tablespoons of black beans on each tortilla, then top with the fish mixture.
6.Roll the tortillas and place them on a baking sheet.
7.Pour the tomato sauce over the top of each tortilla.
8.Bake in the oven at 325°F for 15-20 minutes until heated through.
