Ingredients

12 ounces self-rising flour
6 ounces sugar
1 teaspoon mixed spice
1 teaspoon baking soda
2 tablespoons olive oil
500 g dried mixed fruit ( e.g . Raisin 's , Sultanas , Candied peel etc )
300 ml virtually skim milk

Instructions

1.Preheat your oven to 160°C Fan / 180°C / Gas Mark 4.
2.Grease a 20cm round tin or line it with baking paper.
3.Mix all the dry ingredients together in a large mixing bowl.
4.Make a well in the centre and add in oil, finally pour in milk and stir the mixture together until it is just combined.
5.Pour the mixture in the tin and level it in a way that it is evenly distributed and then bake for 1 hour 20 minutes or until a skewer comes out clean when tested.
6.When it is baked, take it out of the tin and leave to cool completely on a wire rack.
