Palmiers, also known as elephant ears, butterflies, palm leaves, or French hearts, are a classic French pastry that originated in the 19th century. They are named for their distinctive shape that resembles a palm leaf or an elephant ear. Traditionally, Palmiers are sweet pastries made from puff pastry dough that is coated in sugar and baked until golden brown. 6.Fold one half over the other so that each half meets in the centre of the pastry sheet.
.Refrigerate for 30 minutes.
.Repeat the same steps for the other puff pastry sheet.
.Remove the pastries from the refrigerator and slice them into 1/4-inch/0.6-cm thick pieces.
.Place each piece onto the prepared baking sheet, cut-side down.
