Ingredients

1 cup jasmine rice
1 cup dried lentils
1/2 cup olive oil
2 medium onions , thinly sliced
1 teaspoon cumin ( or more to taste , I prefer more )
2 teaspoons salt
black pepper ( I like lots ! )

Instructions

1.Rinse the rice and lentils and soak them in cold water separately for 15 minutes.
2.In a pot, cook the soaked rice in 2 cups of water and 1 teaspoon of salt. Bring to a boil, then simmer for 15 minutes or until the water is completely absorbed by the rice.
3.In another pot, cook the soaked lentils in 2 cups of water and 1 teaspoon of salt. Bring to a boil, then simmer for 25-30 minutes or until the lentils are cooked through.
4.In a frying pan, heat the olive oil over medium heat and fry the sliced onions until crispy and golden.
5.When both the rice and lentils are cooked, mix them together and season with cumin, black pepper, and more salt to taste. Top with the crispy onions and serve hot.
