Ingredients

1 cup sugar
1 1/4 cups water
2/3 cup shortening
2/3 cup dates or 2/3 cup raisins
1/2 teaspoon nutmeg
2 teaspoons cinnamon

2 teaspoons water
2 cups flour

Palestinian Fasting Cake, also known as Ma'amoul, is a traditional cake served during the Muslim holy month of Ramadan. Instructions

1.Preheat your oven to 350 degrees F (175 degrees C).

5.In a small bowl, dissolve the baking soda and salt in 2 teaspoons water.
6.Add the baking soda mixture to the cooled date or raisin mixture and stir.
7.In a large bowl, sift together the flour and baking powder. Gradually add the date or raisin mixture, stirring until just combined.
8.Pour the batter into a greased 9x13 inch baking dish.
9.Bake for 30 to 35 minutes, or until a toothpick inserted into the center of the cake comes out clean.
10.Let cool before serving.
