1/8 teaspoon vanilla extract ( optional-omit if making savory dish )
1/4 teaspoon honey or 6 drops liquid stevia
1/4 teaspoon sea salt ( optional )

Instructions

1.In a medium bowl, whisk together the beaten egg, milk, coconut flour, melted butter or coconut oil, baking soda, apple cider vinegar, vanilla extract (if you're using it), honey or stevia, and sea salt until you have a smooth batter.
2.Grease a microwave-safe mug or ramekin with nonstick cooking spray or butter.
3.Pour the batter into the greased mug or ramekin, smooth the top, and microwave on high for 90 seconds.
4.Carefully remove the muffin from the mug or ramekin and slice in half crosswise. Toast until golden-brown on the outside and heated through.
