Ingredients

2 tablespoons oil
1 teaspoon coriander seed
1 tablespoon cumin seed
1 pinch ajwain
1 onion , chopped
2 medium-size tomatoes , chopped
2 teaspoons turmeric powder
1/2 teaspoon red chili powder
1 1/2 teaspoons salt
250 g potatoes , boiled
water , to make gravy
2 cups fresh yoghurt , , beaten
1 teaspoon green chili , chopped
Palda is a traditional Indian curry that is popular in the northern regions of the country. Instructions

1.Heat 2 tablespoons of oil in a large pan over medium heat.
2.Add 1 teaspoon of coriander seeds, 1 tablespoon of cumin seeds, and a pinch of ajwain to the pan.
3.Once the seeds start to pop, add 1 chopped onion to the pan and sauté until golden brown.
4.Add 2 chopped tomatoes, 2 teaspoons of turmeric powder, 1/2 teaspoon of red chili powder, and 1 1/2 teaspoons of salt to the pan and mix well.
5.Cook until the tomatoes break down and form a thick paste.
6.Add 250g of boiled potatoes to the pan and mix well.
7.Pour enough water into the pan to make a gravy and bring to a boil.
8.Once the gravy comes to a boil, lower the heat, cover the pan, and let it simmer for 5-6 minutes.
9.Add 2 cups of beaten fresh yogurt and 1 teaspoon of chopped green chili to the pan.
10.Mix well and cook for another 5 minutes.
11.Serve hot with rice or bread.
