Ingredients

100 g honey
140 g wholemeal flour
1 1/2 teaspoons baking powder
100 ml milk
1 egg
40 g butter
65 g soft brown sugar
40 g crystallized ginger , chopped in to small pieces
1 teaspoon ground ginger
1 teaspoon quatre-epices
Pain D’Épices also known as French Gingerbread, is a traditional cake from France. Its deep and warming flavor is often enjoyed during the festive season but can be enjoyed all year round. Made with honey instead of traditional sugar, this recipe is a healthier take on a traditional classic. The addition of ginger and quatre-epices brings warmth and spice which balances perfectly with the sweetness of the honey. Perfect for your morning cup of coffee, an afternoon snack, or a sweet after-dinner treat with a glass of wine, this loaf is sure to please your palate.

Instructions

1.Preheat your oven to 320F (160C)2. In a saucepan, gently heat together the honey, milk, sugar and butter.
2.In a mixing bowl, sift together the flour, baking powder, ground ginger and quatre-epices.
3.Make a well in the center of your dry ingredients and add the egg.
4.Pour in the honey and milk mixture and mix until smooth.
5.Finely chop the crystallized ginger and stir into the mixture.
6.Pour into a greased or lined tin and bake for 45-50 minutes or until a toothpick comes out clean.
7.Leave to cool in the tin for 10 minutes before removing and allowing to cool completely on a wire rack. Enjoy!
