Ingredients

1 2/3 cups milk
6 tablespoons oil ( I use olive oil )
2 teaspoons salt ( sea salt if available )
1 tablespoon sugar
2 teaspoons rounded yeast
2 cups whole wheat flour
2 3/4 cups unbleached white flour
Pain de Mie, also known as Pullman bread, is a sandwich bread that originated in France. It has a sliced top and bottom and a soft texture that's perfect for making sandwiches or toast. This bread is made using a special Pullman bread pan, which gives the bread its rectangular shape and flat top. Pullman bread can be made with a variety of flours, but this recipe uses a combination of whole wheat and white flour to give it more nutrition and flavor. Instructions

1.In a mixing bowl, mix the milk, oil, salt, and sugar.
2.Add the yeast and mix it again until incorporated. Let it stand until frothy for about 10 minutes.
3.Add the whole wheat flour and 1 1/2 cups of white flour, mixing until smooth. Keep adding the remaining flour, 1/2 cup at a time until the dough comes together in a ball.
4.Knead the dough for 10 minutes, or until it becomes smooth and elastic. Place the dough in a bowl and let it rest for 10 minutes.
5.Lightly oil the inside of a Pullman bread pan. Roll the dough into a rectangle and then roll it up, tucking in the edges.
6.Place the dough into the pan and cover it with a towel. Let it rise for an hour.
7.Bake the bread at 375°F for 30-35 minutes, or until a toothpick inserted in the center comes out clean. Let the bread cool for 15 minutes before removing it from the pan.
