Pain Au Lait With Espresso, Cardamom, & Chocolate is a twist on the traditional Pain Au Lait pastry. The rich flavors of espresso, cardamom, and semi-sweet chocolate come together to create a sweet and savory treat that is perfect for breakfast or as an afternoon snack with a cup of coffee. The soft and tender texture of the dough pairs perfectly with the crunchy bits of chocolate. You can also customize this recipe by adding in nuts or dried fruit.

Instructions

.In a small bowl, add instant yeast, sugar, and sea salt to 1/4 cup warm water. Stir to combine.
.In a large bowl, add bread flour and make a well in the center. Add the yeast mixture into the well.
.Add egg, room temperature butter, milk, crushed cardamom pods, and espresso.
.Mix the dough with your hands until it comes together, then turn it out onto a floured surface and knead for 10-15 minutes until smooth and elastic. The dough should be soft and slightly tacky.
.Cover the dough and let it rest for about an hour, or until it has doubled in size.
.Punch down the dough and knead in the chocolate chips or pieces. Divide the dough into 12 equal pieces and shape them into balls.
.Place the dough balls on a baking sheet lined with parchment paper and flatten them slightly. Cover the dough and let it rest for another 20-30 minutes.
.Preheat your oven to 375°F (190°C).
.Brush the dough with egg wash, then bake for 15-20 minutes, or until the tops are golden brown.
