Instructions

1.In a bowl, mix warm water, bread flour, instant nonfat dry milk, white sugar, salt, softened butter, and instant yeast until a smooth dough forms. Let it rest for an hour.
2.Roll out the dough into a large rectangle and spread softened butter evenly over the surface.
3.Fold the dough into thirds, like a letter. Roll it out again and fold into thirds again.
4.Repeat this process two more times. Refrigerate the dough for at least two hours.
5.Preheat oven to 375°F (190°C). Roll out the rested dough and cut into strips.
6.Place chocolate pieces on top of the strip and roll the dough around it.
7.Mix the egg yolk with milk, gently brush it on top of the croissant dough and sprinkle some sugar over the top.
8.Bake for 20 to 25 minutes or until golden brown.
