Spanish rice mix ( you will need 2 packages , 5 to 6 ounces each )
1 1/2 quarts fat-skimmed chicken broth
1/4 teaspoon saffron thread ( optional )

Instructions

2.Heat up olive oil in a large pot over medium heat. Add in the cubed cooked ham or Canadian bacon, and cook until it turns slightly brown.
3.Add in the Spanish rice mix and stir well.
4.Pour in the chicken broth and saffron thread if using. Stir and bring to boil.
5.Reduce the heat to medium-low, add in the chopped roasted peppers and frozen peas. Simmer for about 10 minutes.
6.Take off the heat and let it rest for another 5 minutes before serving.
