1 lb chicken breast , cut in cubes
1/2 lb white fish fillet
1/4 lb sea scallops
1/4 lb squid ring
1/2 lb mussels
1/2 lb clam
1 lb shrimp , raw medium , shell on
4 prawns , whole , shell on ( large shrimp )
1 lb rice , Medium grain ( also known as `` pearl '' )
1 yellow onion , diced
2 medium tomatoes , diced
1/2 medium red pepper , seeded and sliced
1/2 medium yellow pepper , seeded and sliced
1/2 medium green pepper , seeded and sliced
10 ounces peas
1/2 cup olive oil
3 garlic cloves
2 teaspoons parsley
10 saffron strands
5 cups broth
1/2 cup olive oil
1 teaspoon salt

Instructions

1.Heat 1/4 cup of olive oil in a paella pan over high heat.
2.Add the chicken, salt, and paprika.

4.Add the minced garlic, diced onion, and sliced peppers and stir for another 5 minutes.
5.Add the diced tomato, saffron strands, and parsley. Let it cook for 2 minutes.
6.Add the broth and bring it to a boil, then lower heat and let simmer.
7.Give it a quick stir before adding the seafood.
8.Add the rice and evenly spread it out over the pan.
9.Allow the paella to cook for approximately 20-25 minutes, or until all the broth is absorbed.
10.Once the paella is finished cooking, remove it from heat and cover it with a lid. Let it sit for approximately 5 minutes before serving.
