Paddy Burkes Pepper Soup is named after the famous Irish pub located in Clifden, a seaside town in County Galway. This soup is the perfect balance between spicy and creamy and is ideal for those who crave something hearty and filling on a cold evening. The combination of bell peppers, onions, and fresh herbs gives this soup a rich and flavorful taste, and the half-and-half cream makes it silky smooth and luxurious. It's a great way to introduce more plant-based meals into your diet, and it's an excellent alternative to chicken soup when you're feeling under the weather.

Instructions

1.Melt the butter in a large pot over medium heat.
2.Add the chopped onions and bell peppers and sauté until they become soft.
3.Stir in the all-purpose flour and cook for approximately 3 minutes to remove the raw, floury taste.
4.Gradually add in the vegetable stock while whisking to avoid clumps forming in the mixture.
5.Increase heat slightly until the soup comes to a low boil.
6.Lower heat and let simmer for 25 minutes or until the soup thickens.
7.Remove pot from heat and stir in the half-and-half, parsley, basil, salt, and pepper.
