Ingredients

3 tablespoons vegetable oil
6 garlic cloves , chopped
1/2 small onion , peeled and sliced into thin strips
1 1/2 cups chicken breasts , sliced
8 ounces cellophane noodles , soaked in hot water cut into 4 lengths
3 eggs
1 cup bean sprouts
1 cup chopped celery
4 scallions , white & green portions sliced on diagonal into 1 pieces ( green onions )
2 tablespoons fish sauce
1/4 cup chopped roasted peanuts
1 teaspoon fresh ground black pepper

Instructions

1.Heat 1 tablespoon of vegetable oil in a wok over high heat.
2.Add garlic and onion and stir-fry for 1 minute.
3.Add chicken and stir-fry for 3-4 minutes or until the chicken is cooked through.
4.Add cellophane noodles and 2 tablespoons of water and stir-fry for 2 minutes or until the noodles are translucent.
5.Push everything to one side of the wok and add 2 tablespoons of vegetable oil to the other side.
6.Crack the eggs into the wok and scramble them with a spatula until they're cooked.
7.Add bean sprouts, celery, scallions, and fish sauce, and stir everything together.
8.Remove the wok from the heat and sprinkle the roasted peanuts and black pepper over the top.
