Instructions

1.Heat 1 teaspoon of vegetable oil in a large pot over medium heat.
2.Add 1/2 cup of unpopped corn kernels and cover the pot.
3.Shake the pot occasionally to prevent the kernels from burning.
4.Once the popping slows down, remove the pot from heat and let it sit for a minute.
5.In a separate pot, combine 1/2 cup chopped peanuts, 1/2 cup brown sugar, 1/4 cup vegetable oil, 1/4 cup light corn syrup, and 1 1/2 tablespoons of fish sauce or oyster sauce.
6.Heat the mixture over medium heat, stirring constantly, until it reaches a boil.
7.Remove the pot from heat and stir in 3 tablespoons of lime juice, 1 tablespoon of sriracha asian garlic sauce, 1/4 teaspoon of baking soda, and 2 tablespoons of lime zest.
8.Pour the mixture over the popcorn in the first pot and stir to coat evenly.
9.Spread the popcorn on a large baking sheet and let it cool completely.
10.Sprinkle chopped cilantro over the popcorn if desired and serve.
