Pad Kee Mow, also known as drunken noodles, is a popular dish in Thai cuisine. The dish is traditionally made with wide rice noodles, meat or seafood, chili peppers, garlic, and basil. In this recipe, we've used wide egg noodles as a substitute for the rice noodles and added chopped tomatoes to give the dish a slightly sweet and tangy taste. The elevated spice level is what sets Pad Kee Mow apart from other noodle dishes. This dish is perfect for those who love big, bold flavors that pack a punch. It's also relatively quick and easy to prepare and makes for a satisfying weekday dinner.

Instructions

1.In a small bowl, mix together the chopped Thai chile, chopped garlic, sugar, rice vinegar, and black pepper.
2.In a separate bowl, mix together the fish sauce and 1 tablespoon of the vegetable oil.
3.Heat the remaining vegetable oil in a large skillet over high heat. Add the ground pork or chopped chicken and cook until browned, breaking up any large chunks with a spatula.
4.Add the egg noodles, chopped tomatoes, and the mixed sauce from step 1 and stir until combined.
5.Cook for 2-3 minutes until the noodles are heated through and the sauce has thickened slightly.
6.Add the fish sauce mixture from step 2 to the skillet, stirring gently until it has been evenly distributed.
7.Stir in the Thai basil leaves and buds, remove from heat, and serve hot.
