Ingredients

3 packages active dry yeast
1 1/2 ounces rum
1/2 cup lukewarm milk
1 cup melted butter
6 cups flour
prune filling ( jams without added sugar ) or cherry jam ( jams without added sugar )
1 cup milk , scalded & cooled
oil ( for deep frying )
2 teaspoons salt
powdered sugar , for sprinkling
20 egg yolks
3/4 cup sugar
Paczki is a popular Polish treat enjoyed all year round, especially on Fat Tuesday (the last day before lent). They are soft, chewy doughnuts filled with different flavored fruit jams such as prune, raspberry, apricot, cherry, or lemon filling in the middle. The doughnuts are then deep-fried and dusted with powdered sugar. The recipe has been passed down through generations and continues to be a beloved treat in Poland today.

Instructions

1.In a large bowl, combine yeast, 1 tsp sugar, 1/4 cup flour with 1/2 cup lukewarm milk & rum. Set it aside in a warm place for at least 15 minutes to let the yeast foam up.
2.In another bowl, whisk egg yolks, sugar & salt until fluffy.
3.In another bowl, sift 5 cups of flour and set aside.
4.Add melted butter to the yolk mixture and stir in the yeast mixture.
5.Gradually stir in the sifted flour and scalded milk. Mix the dough and knead it on a lightly floured surface for around 5 minutes until it becomes smooth.
6.Transfer the dough to an oiled bowl and cover it with cling wrap. Let it stand in a warm place for about 2 hours until the dough rises (it should double in size).
7.Roll the dough into a 2-inch thickness on a lightly floured surface and use a biscuit ring (or any cookie cutter) to gently press down to shape the dough into rounds.
8.Let the dough rise again for about 30 minutes until it becomes fluffy. Then, deep fry the dough in hot oil (at around 375°F) until it becomes golden brown.
9.Drain each paczki on a paper towel and fillings while still warm with a prune or cherry jam (without added sugar). Finally, sprinkle powdered sugar on top & enjoy!

This treat contains a lot of sugar and high in calories and fat, so they should be enjoyed in moderation.
