Ingredients

1 jar white pearl onions ( not pickled & drained )
5 -6 boneless chicken breasts ( or thighs or cut up chicken )
1/2 cup all-purpose flour
2 tablespoons water
4 ounces bacon ( thick , cubed )
8 ounces button mushrooms , quartered
2 cups red wine
1/4 cup brandy ( optional )
1 medium onion , quartered
2 stalks celery , quartered
2 medium carrots
3 garlic cloves , crushed
1/2 teaspoon thyme
1 bay leaf
3 cups chicken stock ( or broth or water and bouillon )
kosher salt & freshly ground black pepper
Coq au Vin is a traditional French dish that is both hearty and rich in flavor. Instructions

1.Preheat oven to 350 degrees Fahrenheit.
2.In a large bowl, season chicken with salt and black pepper. Add flour and stir until chicken is coated.
3.In a Dutch oven or oven-safe pot, heat bacon over medium heat until crispy. Remove bacon and set aside.
4.Brown chicken in the remaining bacon grease until golden brown on both sides. Remove chicken from the pot and set aside.
5.Add onions, celery, carrots, and garlic to the pot and cook until softened.
6.Add mushrooms and cook until softened.
7.Add wine, brandy (if using), and chicken stock, then stir in thyme and bay leaf. Add chicken back into the pot.
8.Cover and bring to a simmer on the stovetop, then transfer to the preheated oven.
9.Bake for 45 minutes to 1 hour, or until chicken is cooked through and tender.
