Ingredients

1 lb eggplant , peeled cut into 1-inch dice
1 teaspoon garlic , minced
1 tablespoon cornstarch , mixed with 2 tablespoons water to make a paste
vegetable oil , for deep-frying
2 tablespoons vegetarian oyster sauce
2 tablespoons light soy sauce
2 tablespoons water
1 tablespoon white vinegar
1 tablespoon granulated sugar
1 teaspoon sambal oelek chili paste
1/2 teaspoon ground bean sauce ( recommend Koon Chun brand )
1/2 teaspoon sesame oil

The eggplant is fried until crispy and then stir-fried with a spicy sauce made from garlic, soy sauce, oyster sauce, and chili paste. Instructions

1.Add enough oil to a pan or wok to deep-fry the eggplant. Heat the oil to 375°F.
2.Fry the eggplant in the hot oil until it is golden brown and crisp. Remove the eggplant from the oil and drain off any excess oil.
3.In another pan or wok, heat 2-3 tablespoons of oil over medium-high heat. Add the garlic to the pan and stir-fry for a few seconds until fragrant.
4.Add the vegetarian oyster sauce, light soy sauce, water, white vinegar, granulated sugar, sambal oelek chili paste, ground bean sauce, and sesame oil. Mix well.
5.Reduce the heat and allow the sauce to simmer for 1-2 minutes.
6.Add the fried eggplant to the sauce and toss until the eggplant is coated in the sauce.
7.Drizzle the cornstarch mixture over the eggplant and toss well, to coat the eggplant in a thick, glossy sauce.
8.Serve hot with steamed white rice.
