Ingredients

1/2 cup cream
1/4 cup sour cream
1 small onion , very finely chopped
1/4 teaspoon salt
1/8 teaspoon cayenne pepper
24 vol-au-vent cases , cooked & cooled
24 oysters
black caviar or red caviar , only a small jar ( to garnish )
snipped chives , to garnish ( optional )
Oyster Volettes are small pastry cases filled with oysters and a creamy, flavorful mixture. This dish is usually served as an appetizer. Instructions

1.In a mixing bowl, whisk together the cream, sour cream, chopped onion, salt, and cayenne pepper until well combined.
2.Chill the mixture for at least 1 hour.
3.Preheat oven to 350°F.
4.Fill each vol-au-vent case with one oyster.
5.Spoon a tablespoon of the cream mixture over each oyster, making sure it doesn't spill out.
6.Bake in the preheated oven until the filling is set and the edges are lightly golden for about 10 - 12 minutes.
7.Remove from the oven and let it cool down to room temperature.
8.Garnish with black or red caviar and snipped chives (optional).
