Ingredients

12 seville oranges
1 lemon
2 pints water
1 kg sugar
Oxford Marmalade is a type of orange marmalade that originated in the city of Oxford, England. It is made with Seville oranges, a type of bitter orange that is high in pectin, making it ideal for making marmalade. Marmalade has a long history in England, dating back to the early 18th century when it was first commercially produced. Today, it remains a beloved spread that is enjoyed all over the world. Making marmalade at home is a great way to ensure that you're getting a fresh, delicious spread that is free of preservatives and additives.

Instructions

1.Begin by washing the oranges and lemon. Cut the oranges into thin slices and remove the seeds. Squeeze the juice from the lemon and set aside.
2.In a large saucepan, combine the orange slices, lemon juice, and water. Bring to a boil, then reduce the heat and simmer for 2 hours, until the fruit is very soft.
3.Remove the saucepan from the heat and allow it to cool slightly. Carefully pour the mixture into a muslin cloth and tie the corners together to create a pouch. Suspend the pouch over a large bowl and let it drip overnight.
4.Measure the liquid collected in the bowl and add an equal amount of sugar. Return the liquid to the saucepan and cook over medium heat, stirring constantly, until the sugar is dissolved.
5.Bring the mixture to a boil and cook for 15-20 minutes, or until it reaches 105C on a sugar thermometer.
6.Remove from the heat and allow the marmalade to cool slightly. Pour into sterilized jars and seal.
7.Enjoy your homemade Oxford Marmalade on toast, muffins or scones.
