Ingredients

1/2 lb extra lean ground beef
1 cup chopped Italian plum tomato
1 cup zucchini , julienne-cut
1/2 cup finely chopped green onion
1 can black beans , drained , rinsed
1 can old el paso enchilada sauce
1 container nonfat sour cream
1 teaspoon old el paso less sodium taco seasoning mix ( from 1 oz . pkg . )
8 corn tortillas , halved
6 ounces shredded reduced-fat cheddar cheese
1/3 cup chopped fresh cilantro

Instructions

5.Preheat oven to 375°F (190°C). Spray a 13 x 9-in. baking dish with cooking spray.
6.Arrange 8 tortilla halves in bottom of dish. Spoon half of beef mixture over tortillas. Sprinkle with 1 cup of cheese.
7.Repeat layering once, ending with cheese. Cover dish with foil.
8.Bake for 35 minutes. Remove foil and bake for another 10-15 minutes until cheese is melted and lightly browned.
9.Sprinkle cilantro on top and serve hot.
