2 bell peppers | |
1 red onion | |
3 garlic cloves | |

1. | Preheat oven to 400°F. |
2. | Cube the eggplant and zucchini, slice the peppers and onions. |
3. | Mince garlic. |
4. | Toss everything with olive oil, salt, and black pepper. |
5. | Place on a baking sheet and roast for 25-30 minutes. |
