Ingredients

300 g spinach
3 tablespoons olive oil
6 eggs
6 tablespoons milk
150 g grated hard cheese or 150 g feta cheese
150 g pitted olives
100 g toasted breadcrumbs
salt and pepper
This oven omelet recipe is perfect for busy mornings and meal prepping. Made with spinach, eggs, cheese, olives, and bread crumbs, this omelet is high in protein and nutrients. Instructions

1.Preheat the oven to 350°F (175°C).
2.Rinse spinach and dry completely. Chop the spinach into small pieces.
3.Heat a pan to medium and add 2 tablespoons of olive oil. Add the chopped spinach and cook for about 3 minutes, or until wilted. Remove the pan from heat.
4.In a mixing bowl, beat 6 eggs and 6 tablespoons of milk together. Add the wilted spinach and 150 grams of cheese. Stir until well-combined.
5.Heat the other 1 tablespoon of olive oil in an oven-safe frying pan over medium heat. When hot, pour in the egg mixture.
6.Cook for about 3 minutes, or until the edges start to set. Add 150 grams of pitted olives on top of the omelet. Sprinkle with 100 grams of toasted breadcrumbs.
7.Place the frying pan in the oven and bake for about 10-12 minutes or until the omelet is fully cooked and golden in color on top. Sprinkle with salt and pepper to taste.
8.Remove from the oven and cut into wedges before serving.
