Ingredients

1 lb ground turkey
1/4 cup finely diced onion ( optional )
3 -4 cloves fresh minced garlic ( optional )
2 cups picante sauce , divided
1 package frozen spinach , chopped and squeezed dry
2 teaspoons ground cumin , divided
1/2 teaspoon salt , to taste ( I use seasoned salt )
1/2 teaspoon fresh ground black pepper
1 package cream cheese ( reduced-fat is okay )
flour tortilla , warmed
1 can tomatoes , undrained and diced
1 cup shredded cheddar cheese ( more if desired , reduced-fat cheese is okay )
2 cups shredded lettuce
1/2 cup black olives
1/2 cup diced avocado
1 cup sour cream ( reduced fat is okay is okay )

Instructions

1.In a skillet, cook ground turkey, onion, and garlic until turkey is browned and onion is softened.
2.Add 1 cup of picante sauce, spinach, 1 teaspoon of ground cumin, salt, and black pepper. Cook for 2-3 minutes or until spinach is wilted and mixture is heated through.
3.In another bowl, soften cream cheese in the microwave. Add remaining 1 cup of picante sauce, diced tomatoes, 1 teaspoon of ground cumin, and stir until smooth.
4.In a 9x13 inch baking dish, spread 1/2 cup of cream cheese mixture on the bottom of the dish. Spoon turkey mixture into each tortilla and top with cream cheese mixture. Roll up tightly and place in pan seam-side down.
5.Top tortillas with remaining cream cheese mixture and sprinkle with cheddar cheese.
6.Bake uncovered at 350 degrees for 20-25 minutes or until heated through and cheese is melted.
