12 ounces risotto rice
3 cups vegetable stock , hot
7 tablespoons white wine
2 ounces parmesan cheese , grated , plus shavings , to serve

Instructions

1.Preheat the oven to 190°C (375°F).

4.Drain the mushrooms and reserve the soaking liquid.
5.Add the rice to the pan and stir until it is coated in the oil and lightly toasted.
6.Add the soaked mushrooms and gradually add the vegetable stock, white wine, and reserved mushroom liquid, stirring constantly until all the liquid is absorbed.
7.Cover the dish with foil and bake for 30-35 minutes.
8.Stir in the grated parmesan cheese and season with salt and pepper, to taste.
9.Serve hot sprinkled with some extra thyme and parmesan shavings, if desired.
